4/08/2015I always feel warm when I see the steam coming out through the food during the winter, especially when the cold days you are walking alone on the streets. There's no one on the side, but a house turns on the light, the steam comes out and the tasty smell spreads in the air. Oh, I can't wait to go home to have a beef stew! Slice baguetteS by hands, and soak them into the sauce. You can't help yourself closing your eye, chewing it, and you smile. It seems it can melt your frozen soul (should I take some to visit Elsa? lol).
I always think the beef stew is a very difficult dish. It is not easy to keep the beef tender but tasty at the same time. I am a food adventurer, so after many years I finally tried to cook it (the truth is that I love to eat :p). It turned out I was wrong. It is super easy and tasty! You just need to put everything into a pan and wait for it. Share this to anyone who thinks it's difficult to cook, loves the beef stew like me, anyway... 入味卻又能保持軟嫩,味道掌控的得宜,實在不容易
加上媽媽餐桌上從沒出現過這道料理
讓我對他總是不敢嘗試
但,基於愛吃的精神!我踏出了第一步
想不到一踏出,才發現真是簡單
東西丟下去就好,簡直是個適合我的懶人料理 哈
所以分享給跟我一樣,覺得燉牛肉是道很難料理的你

冬天總是最受不了有煙的食物
寒冷的街頭,路燈閃著,遠方的燈亮起,白煙竄出
鼻子扭動了一下,阿~是燉牛肉
好想吃呀!
撕著長棍麵包,吸著濃綢醬汁,沾滿著牛肉的精華,入口
咀嚼,嘴角漸漸的往上展開,雙眼漸漸闔上
「辣燉牛肉」撫慰嚴寒的靈魂
讓今夜的我找到歸屬
「我我晚餐」就是你了!
Recipe
(Yield for 4 - 6)
Ingredients
250g beef brisket (removed the fat and sliced into 2-3 cm)
1 small red onion (peeled and diced)
2 red or yellow peppers (deseeded and sliced)
1 or 2 fresh chillies(deseeded and sliced)
2 tbsp olive oil
3 cloves garlic (peeled and chopped)
1 tsp dried oregano
1 tsp dried thyme
1 tsp smoked paprika
2 tsp ground nutmeg
1 tsp ground cumin
1 tsp cumin
1 bay leave
Freshly ground black pepper
Sea salt
1/2 cup hot coffee (I use espresso)
1 400g tin of plum tomatoes
1 tbsp brown sugar or honey
1 tbsp extra strong Dijon mustard
2 tbsp Worcestershire sauce
Method
- Pour olive oil into a casserole pan on low heat, put in oregano, thyme, paprika, ground cumin, ground nutmeg, and bay leave. Fry a little bit, add in onion, chillies and garlic, cook it until softens.
- Make a hole in the middle on medium heat, and add in all beef brisket, black pepper, sea salt, and fry it until every side is light golden brown, about 1 minute, to keep juice inside.
- Pour in hot coffee, plum tomatoes, brown sugar, extra strong Dijon mustard and Worcestershire sauce, and stir it well and cover with a lid. Simmer for about 2 hours on low heat, stir occasionally.
- At 1 and half hours, open the lid, put in red or yellow peppers, and cumin, stir it, and simmer for 30 minutes.
- Before you leave it from stove, taste it to see if you need more chillies, salt or pepper.
- Serve it hot with rice or baguettes!
- Enjoy the heat!
*Sylvia's Tips:
Sylvia's Spicy Beef Stew is the best lazy dinner choice! You can put the stew into several seal bags (the portion enough for each meal) and freeze it. When it comes time that you don't want to cook. You just need to reheat it, serve it with the baguettes. Sounds good?

材料
牛腱 250g(去脂肪,切成2 - 3cm厚)
紅洋蔥 1小顆(切小丁)
紅辣椒 1或2條(去籽)
黃或紅甜椒 2顆(切粗條狀)
橄欖油 2大匙
茴香籽粉 1小匙
茴香籽 1小匙
乾百里香 1小匙
乾奧勒岡葉 1小匙
紅椒粉 1小匙
豆蔻粉 1小匙
乾月桂葉 1片
現磨黑胡椒
海鹽
熱咖啡 1/2杯
整粒蕃茄罐頭 400g一罐
紅糖或蜂蜜 1大匙
法式芥末醬 1大匙
辣醬油 2大匙
方法
- 將橄欖油倒入燉鍋中,開小火。放入茴香粉、乾百里香、乾奧勒岡葉、紅椒粉、豆蔻粉、乾月桂葉,煎一下後倒入洋蔥和辣椒,煮至洋蔥變軟。
- 轉為中火,將食材往鍋旁推,中間成為一個洞狀,放入牛腱撒上黑胡椒和鹽,約略將每面煎成淺金黃色鎖住肉汁。
- 倒入熱咖啡、蕃茄罐頭、糖、法式芥末醬和辣醬油。攪拌均勻後,蓋上鍋蓋,小火燉煮約兩小時。
- 當煮到一個半小時時,放入甜椒和茴香籽,攪拌後繼續燉煮約30分鐘。
- 離火前,嘗味道,如果想要很辣就多放辣椒,或是加鹽跟黑胡椒。
- 配上法國長棍或是鬆軟的米飯。
- 開動!
*Sylvia's Tips:
燉牛肉可以讓我一個月少洗幾次碗,一次燉個幾餐的份,分開冷凍起來,想吃就拿下來加熱,直接端上鍋子,配上手撕的法國麵包,連碗和叉子都免了,真是太適合不想做家事的日子了啦!(到底有多不想洗碗?!哈)
