There are many reasons that led me to cook this dish. Too may things in the refrigerator. No time to shop. Forget to shop (which happens many times), etc. I am a tofu, egg, spinach, tomato, and bread lover (literally). This one skillet cooking satisfied all I can wish for, and most importantly, I don't need to go out to shop! Even the croutons were made by the extra toast from the breakfast. Could you use ingredients from your refrigerator? Sure! You can put every veggie, or everything CAN be eaten. This one skillet “Dinner for ONE” dish is just easy and yummy!

我大概可以想好幾個理由,讓今晚不得不煮這道迷人料理

我很喜歡吃豆腐、蛋、香菇、菠菜、蕃茄、麵包...(天呀,我有什麼不愛?!)

所以就全部丟進去了,一鍋滿足一個胃和好多願望

更棒的是我不用特地出門買菜呀,連麵包丁都是早餐多出來烘烤而成

所以有多的麵包的那天晚上,似乎也很適合這道料理(又多了一個理由了 哈)

這樣你是不是也可以用你冰箱裡的菜來煮?

當然!當然!真是道簡單又美味的料理!

打上兩顆蛋收尾,為樸素的「我我晚餐」打造奢華享受

總之,就是充滿滿滿滿營養的一鍋料理





Recipe
(Yield for ONE)

Ingredients
Olive oil 1 tbspSilken Tofu 30g (sliced to french fries' shape)
2 tbsp flour (or enough to coat tofu)
1 sliced chia seed toast(chopped)
2 medium size tomatoes (chopped into small cube)
Mix Mushrooms 50g
80g spinach
1 clove garlic(cut into half)
2 eggs
Salt 
Black pepper
1/2 tsp dried oregano

Method

  • Preheat oven to 180℃/350°F. Chop toast into big cubes.
  • Add olive oil into a skillet. Cover sliced tofus with flour, fried it until every side is light golden brown.
  • Put the croutons and fried tofu into oven until they become golden brown, around 5-10min.
  • Add tomatoes in the skillet (extra olive oil can be added if necessary). Put salt, black pepper, dried oregano, garlic into the skillet, and stir well. Add spinach, mix mushrooms, and lightly stir it, and add in tofu fries.
  • Crack 2 eggs on the top of the ingredients, cover them with a lid, and wait for it until the texture of the eggs is what you like (running or hard).
  • Sprinkle croutons on the top.
  • Enjoy!

*Sylvia's Tips: 
Sliced tofu can be broken very easily, so covering it with flour and frying it can keep the shape. You can just fry, or fry and bake. It saved more cooking time with just this step: fried first and pop it into oven.

材料
橄欖油 1大匙
雞蛋豆腐 30g(切條狀)
太白粉 適量
一片土司(任何口味都可,我用的是奇亞籽)
中型蕃茄 兩顆(切小丁)
任何你愛的混合香菇 50g
菠菜 80g(切不切都可)
大蒜 一顆(切半)
蛋 兩顆

黑胡椒
1/2匙 乾奧勒岡葉

    方法
    • 烤箱預熱180度。土司切大丁備用。
    • 取一平底鍋,加入些許橄欖油,豆腐沾太白粉,放入豆腐條,煎至每面呈淡金黃色。
    • 土司與豆腐薯條放入烤箱烤至金黃色,約5~10分鐘。
    • 將蕃茄丁放入平底鍋,適情況添加橄欖油,加上鹽、黑胡椒、乾奧勒岡葉、大蒜,攪拌均勻後,加入香菇和菠菜攪拌,再加入烤好的豆腐薯條。
    • 最後打上兩顆蛋,蓋上鍋蓋,當蛋呈現自己喜歡的樣子(半熟、全熟),熄火。
    • 撒上酥酥的土司丁。
    • 上菜!


    *Sylvia's Tips:
    豆腐薯條先沾粉煎再烤,能保持形狀不易散落,再經過烤箱烘烤,即可成為外酥內嫩的可口薯條棒啦!當然你也可以全都用煎的,不過用烤箱輔助可以節省下不少時間。
