Happy Thanksgiving!
Have you decided your sweet treat for tonight's dinner yet? Or you are tired for pumpkin pie? Here has a good choice you can refresh Thanksgiving day. Naughty black forest cake, why it's naughty? I have to say, I didn't use cherries, cream, even Kirschwasser. I replaced it with roselle jam, mascarpone, and rum. I know it's totally different than black forest cake, but it will definitely hit the feast!

豐盛的烤巨大火雞餐後 當然要解油膩!

端出酒香溢出的蛋糕 再適合不過(大概可以再吃一輪火雞大餐 哈)
但為什麼是「淘氣」黑森林蛋糕呢?
源自德國的黑森林蛋糕,夾心加入櫻桃酒、櫻桃和鮮奶油是他的最大特徵
沒有櫻桃酒也沒櫻桃,反倒用了萊姆酒和洛神花果醬替代,又加了我最愛的乳酪
你說他淘不淘氣!(好啦,我承認是為了滿足自己的口慾...)

Recipe
Ingredients
Chocolate cake
Butter 60g
All-purpose flour 1 ½ cup
Cocoa powder 20g
Baking powder 1tsp
Baking soda 1tsp
Pinch of salt
Sugar 150g
Egg 1
Dark chocolate 50g
Yogurt 115g
Hot water 100ml
Cheese icing
Mascarpone cheese 250g
Icing sugar 10g
Whipping cream 50g
Ganache
Dark chocolate(chopped) 50g
Butter 10g
Whipping cream 50g

Rum 3tbsp
Roselle jam 60g
Shaved chocolate
Method
Chocolate cake
Heat the oven to 180 degree. Butter three 6 inch round cake pan, then dust with flour. Melt dark chocolate in the microwave,
put it side to cool. In another bowl beat butter and sugar until pale. Beat in
egg until fluffy (about 3 minutes). Add melted chocolate, yogurt whisk to
creamy. Mix in cocoa powder, flour, baking powder, baking soda, and salt until
well combine. Pouring hot water into the batter, beat it until smooth. Divide
evenly into 3 cake pans, bake for 25 minutes or until insert skewer comes
out clean. Take it out to cool completely.
Cheese icing
Whisk mascarpone cheese and icing sugar, add
in whipping cream beat it until thick.
Ganache
In a saucepan put into butter and whipping
cream, heat it to hot but not boiled (when smoke comes out). Pouring it to the bowl with dark
chocolate, wait few seconds and stir it to creamy. Leave it completely cool.
Once the cakes have cooled, generously brush rum
over each cakes top. Next, spread cheese icing on cake, top with roselle jam and some juice. Gently put the second cake, and repeat it. Layer the top cake, spread ganache and drizzle of some shaved chocolate.
